Sage Dressing

Ingredients:

  • 1.5 to 2 lbs. white bread, cut into 1-inch cubes and dried, about 10-12 cups
  • 8 tablespoons unsalted butter, separated.
  • 1 lbs yellow onion, diced
  • 4-5 stalks celery, diced
  • 4 cloves garlic, minced
  • 1/4 cup finely chopped fresh sage leaves or 2 tablespoons rubbed sage
  • 4 stalks thyme, leaves only or 2 teaspoons of dried thyme
  • 2 large eggs, beaten
  • 2 cups turkey or chicken stock
  • Salt and black pepper to taste.

Directions:

  1. Add prepared bread to large mixing bowl. (see below if you need to dry out your bread)
  2. Heat the oven to 375°F.
  3. Melt 6 tablespoons of butter in a skillet then add onions, celery, and pinch of salt, stirring every minute for about 10 minutes until veggies are soft. 
  4. Add garlic, sage, thyme, and pinch of salt and black pepper and cook for 2 additional minutes.
  5. In separate bowl beat the eggs then mix in the broth.
  6. Add and toss or fold the cooked onions and celery to the bowl with the bread.
  7. Add 2 tablespoons to the heated pan and melt.
  8. Add half the egg and broth mixture to the bowl with bread then fold or toss before adding the other half.
  9. In the 9x13 baking dish the bread mixture then pour the melted butter around the sides of the pan.
  10. Bake covered for 25 minutes then remove the cover and bake for 15 more minutes till top is browned.
  11. Cover loosely and rest for at least 10 minutes before serving.

Bread Prep:

  1. Preheat the oven to 275°F.
  2. Cut 1.5 to 2 lbs of bread in 1 inch cubes.
  3. Spread the bread cubes on a large baking sheet and bake for around 45 minutes. if bread isn't in a single layer you may need to mix about halfway through cooking.
