Monica's Salsa

Yield: A whole lot.

Ingredients:

  • 8 Vine Tomatoes (Diced)
  • 1 Bunch Cilantro (Finely Chopped)
  • 3 Medium Bell Pepper (all color except Green; Diced)
  • 2 Medium Cucumber (Diced)
  • 2 Medium Onion (Red, Yellow, or White; Diced)
  • 4 Bunches Green Onion (Diced)
  • 2 Tablespoons Garlic (Finely Diced)
  • 2 Medium Anaheim Chilies (Finely Diced)
  • 1 Can Rotel (Cilantro with Lime)
  • 1 Can V8 Juice

Add the following spices to taste:

  • Oregano
  • Garlic Salt
  • Salt
  • Ground Peppercorn
  • Chili Powder

Optional Heat:

  • 1 Each - Serrano and Jalapeno Chili Pepper (Stems, ribs, and seeds removed)

Directions:

  1. Cut all ingredient as directed above and combine in large bowl.
  2. Season with spices to taste.
  3. Refrigerate for 2 hours before serving.

Optional

  1. Take 1/4 - 1/2 of mixture and blend then combine remaining salsa.
