Monica's Salsa
Yield: A whole lot.
Ingredients:
8 Vine Tomatoes (Diced)
1 Bunch Cilantro (Finely Chopped)
3 Medium Bell Pepper (all color except Green; Diced)
2 Medium Cucumber (Diced)
2 Medium Onion (Red, Yellow, or White; Diced)
4 Bunches Green Onion (Diced)
2 Tablespoons Garlic (Finely Diced)
2 Medium Anaheim Chilies (Finely Diced)
1 Can Rotel (Cilantro with Lime)
1 Can V8 Juice
Add the following spices to taste:
Oregano
Garlic Salt
Salt
Ground Peppercorn
Chili Powder
Optional Heat:
1 Each - Serrano and Jalapeno Chili Pepper (Stems, ribs, and seeds removed)
Directions:
Cut all ingredient as directed above and combine in large bowl.
Season with spices to taste.
Refrigerate for 2 hours before serving.
Optional
Take 1/4 - 1/2 of mixture and blend then combine remaining salsa.
