Carne Asada

Ingredients:

  • 4 pound skirt steak trimmed of excess fat

Marinade

  • 2 jalapeño seeded and minced
  • 8 cloves garlic minced
  • 1 cup fresh cilantro leaves chopped
  • 2 orange - juiced
  • 2 lime juiced
  • 2 lemon juiced
  • 4 tablespoons apple cider vinegar
  • 2/3 cup olive oil
  • 2 teaspoon ground cumin
  • 2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Directions:

  1. Mix or blend Cane Asada marinade ingredients.
  2. Put skirt steak and marinade in large ziplock bag, remove most of the air and seal. Refrigerate for at least 1 hour, but no longer than 8 hours.
  3. Remove from Marinade and pat dry with paper towels.
  4. Preheat an outdoor grill to medium-high. Grill steaks till cooked (little charring is alright), Remove steaks and wrap with aluminum foil rest for 5 minutes.
  5. Slice thinly across the grain and serve.
