Naan

Yield: ~10-15 - 8 inch pieces

Ingredients:

  • 4 cups flour
  • 1/4 cup cottage cheese
  • 1 teaspoon yeast
  • 1 teaspoon sugar
  • 2 tablespoons & 2 teaspoons vegetable oil
  • 1/2 teaspoons caraway seeds – toasted and ground
  • 2 cups warm water about 110 degrees
  • 2 eggs

Extra ingredients

  • 1/2 cup of flour for counter 
  • About 1 teaspoon vegetable oil for bowl

Directions:

  1. Warm 2 cups water to 110 degrees  
  2. Add sugar to water and mix till dissolved
  3. Add Yeast and gently mix then let sit for 5-10 minutes to activate
  4. Toast Caraway seeds over medium heat till fragrant then grind
  5. Mix oil, cottage cheese and egg with the water mixture
  6. Combine flour and ground caraway seeds in a large bowl
  7. Making a well in the center pour all wet ingredients and combine
  8. Once combined move to lightly floured countertop and knead for 5-10 minutes.
  9. Lightly oil the bottom and sides of the large bowl and place dough in and let rise for 10-20 minutes
  10. Knead the dough again for 5-10 minutes.
  11. Place dough back in bowl in a warm spot till it doubles in size about 1 – 1.5 hours
  12. Once doubled in size move back to lightly floured counter
  13. Roll dough out and cut in half.
  14. Roll each half out and cut in half again. 
  15. Heat griddle to 450 degrees 
  16. Roll each quarter out to about 1.5 inches and divide in to about 1.5 inch pieces.
  17. Pull piece till it is thin and place on griddle till browning occurs about 1-3 minutes flip and brown the other side.
