4-5 cups of broccoli stems sliced. Remove any woody parts. (About 20 inches worth of stems.)
Salt and pepper to taste
About 3 cups low-sodium chicken broth
Directions:
Steam broccoli stems slices for 5 minutes.
Heat olive oil in a medium pot over medium high heat.
Add onions and broccoli stems along with a pinch of salt cook for about ten minutes stirring often. Turn heat down to medium heat so veggies don't brown.
When stems and onions become tender add garlic and pepper then cook for an additional 30 seconds.
Add chicken broth till veggies are covered by 1/4 of an inch and heat till just starts to boil.
Transfer to blender and blend for 20-30 seconds till smooth.
Place back in pot, taste and adjust seasonings if required.
